We all love a good snap crackle pop, right?! We re-created this childhood favorite into a marshmallow-free version, but trust us, they are just as sticky and delicious! Instead, we used Joolies dates, mixed with raw coconut butter to create a sticky marshmallow-like paste.

Medjool Date Rice Krispies

Vegan, Gluten Free, Nut free, Refined Sugar Free

  • prep time: 15 minutes
  • cook (aka chill) time: 30 minutes
  • total time: 45 minutes

INGREDIENTS:
  • 10 Joolies medjool dates
  • 1/4 cup warm water
  • 1/2 cup coconut butter, melted
  • 1/2 tsp vanilla 
  • pinch of sea salt
  • 4 cups puffed or crispy rice cereal
 
DIRECTIONS:
  1. Place dates in hot water to soak for about 5 minutes (this softens them and allows for a smoother texture).
  2. In a food processor or blender, place soaked dates and 1/4 cup water. Blend until finely chopped.
  3. Next, add in the coconut butter, vanilla, and sea salt. Mix until the texture is smooth.
  4. In a large bowl, combine the cereal and coconut date paste and mix thoroughly.
  5. Grab an 8x8 baking pan, line with parchment paper, then press the krispie treats evenly in the pan. 
  6. Place in the fridge for 30 minutes, slice and enjoy! 
Store in an air tight container for up to a week--does not have to be refrigerated
