There are so many snack bars to choose from at the grocery, some of them containing lots of unnecessary, yucky ingredients. Our solution? Whip up some of your own! 
 
These Raw Superseed Date Bars are completely vegan, paleo, nut free, AND refined sugar free! Plus they don’t require any baking and are super easy to make. They are perfect for those running-out-the-door moments or really any hanger moment!

Raw Superseed Date Bars

Vegan, Paleo, Nut-free, Refined sugar-free

  • prep time: 15-20 minutes
  • cook (aka chill) time: 1-2 hours
  • total time: 1.5-2 hours
Servings: 6-8
 
INGREDIENTS:
  • 1 cup pumpkin seeds
  • 1 cup sunflower seeds
  • 1/2 cup flaxseed, ground
  • 2 tbsp chia seeds
  • 1/4 cup sunflower seed butter
  • 10 Joolies Medjool dates
 
DIRECTIONS:
  1. Line a standard loaf pan with parchment paper and set it aside.
  2. Place all ingredients in a food processor or blender and process until a sticky dough is formed--it should stick together when pressed between your fingers.
  3. Transfer the dough to the lined loaf pan and press evenly + firmly into the pan using a spatula or your hands.
  4. Pop in the fridge for 1-2 hours to firm up. Use the parchment paper to easily remove the chilled mixture, then slice + enjoy. (I topped mine with some grain-free granola for an added crunch!)

Store in an air tight container for up to a week--does not have to be refrigerated
