These chocolate date cups are SO easy to make and taste waaaay better than a Reese's (ooops did we just say that?!). All you need are 4 simple ingredients to make this sexy treat!

Chocolate Date Caramel Cups

(Vegan, GF, Grain-Free, Refined Sugar-Free)

  •  Prep time: 20 minutes 
  • Cook (aka chill) time: 30 minutes
  • Total time: 50 minutes
 
INGREDIENTS:
  • 10-12 pitted Joolies Dates
  • 1/2 cup peanut butter, or nut/seed butter of choice
  • 1 1/2 cups dark chocolate, melted
  • 1/4 cup coconut oil, melted
 
DIRECTIONS:
  1. Soak the pitted dates in hot water for 10 minutes to soften. While you are waiting, melt the dark chocolate and coconut oil in a double boiler on the stove over low heat until just soft, then remove and stir until smooth.
  2. Pour out 3/4 of the water and then transfer the soaked dates into a food processor. Process on high for about 1 minute. Next add in the peanut butter and process until well combined. 
  3. Grab a muffin pan and fill with paper liners. Fill each cup 1/4 of the way with melted chocolate, then add 1/2 tbsp of the peanut butter date caramel into the center of each cup. Cover up with more chocolate and chill in freezer for 30 minutes.
  4. Store in fridge/freezer for 14 days (if storing the freezer, allow to thaw for 5 minutes before serving).
