A healthy yet indulgent twist on the classic breakfast dessert! We love to drizzle some raw coconut butter on top of a warm muffin, which really embodies a freshly baked cinnamon roll 🍩
Ingredients you'll need:

- Tigernut (or Almond) Flour
- Don't have tigernut flour on hand? No problem! You can sub out for some almond flour, but it wouldn't be nut-free if you're ok with that. If you want to experiment with some tigernut flour, you can purchase some tigernut flour on Amazon here.
- Coconut Oil
- You want this to be melted, so pop it into the microwave for 40ish seconds, then let it cool before adding to the batter (you don't want it to cook the eggs). As an alternative, you can use vegetable oil or butter—whatever floats your boat!
- Joolies Dates

- Vanilla Extract
- This little addition adds more flavor while enhancing the other flavors in our recipe! Technically, you can go without it, but it's just so much more worth it to go to the store and spend the cash on a good vanilla. It's like baking banana bread without vanilla, it simply isn't the same without it!
- Cinnamon
- I think cinnamon has to be in every muffin recipe and this is no exception 😂
