 Is there anything better than a campfire s’more?! You may say no, but we say YES😜
 
There IS something better…when you take that campfire s’more and turn it into ooey gooey s’mores bars with a caramel date filling, magic happens. Oh and did we happen to mention that they are also VEGAN, GLUTEN FREE, AND NUT FREE? Now have we convinced you that there is something better?!

Gooey Vegan S’mores Bars

Vegan, Gluten free, Nut free, Grain free

  • Prep time: 25 minutes
  • Cook time: 7 minutes
  • Total time: 32-35 minutes
Servings: 9 
 
INGREDIENTS:
  • Graham Cracker Crust:
    • 1 1/2 cups tigernut flour (can sub Almond)
    • 1/4 cup tapioca flour
    • 2 tbsp olive oil 
    • 1 tsp vanilla 
    • 3 Joolies Medjool dates 
    • 1/2 tbsp ground cinnamon
    • pinch of sea salt 
    Filling + Topping
    • 10 Joolies Medjool dates
    • 1/4 cup hot water
    • 1 dark chocolate bar, chopped
    • marshmallows
 
DIRECTIONS:
  1. Preheat oven to 375 and line an 8x8 baking pan with parchment paper. 
  2. Fill a bowl with hot water and place all the dates in it for about 5 minutes (this helps to create a more enhanced caramel texture).
  3. In a food processor, combine all the graham cracker crust ingredients and blend until a ball of dough forms. Flatten out the dough evenly in the lined baking pan. 
  4. Take the remaining dates and add 1/4 cup hot water to the food processor. Blend until the texture is a thick caramel. Spread date caramel evenly over the crust. 
  5. Take chopped chocolate and sprinkle on top. Then add the desired amount of marshmallows on top. 
  6. Place in oven for 5 minutes on 375 degrees. Then switch the oven over to broil to toast the top of the marshmallows (watch closely, this should take about 2 minutes). 
  7. Cool, slice, and enjoy!
