Chia seeds are loaded with omega-3 fatty acids and fiber, making them a low-carb and relatively high-protein super seed. Studies have shown that chia seeds may help to reduce LDL cholesterol and triglycerides, as well as help to improve glucose intolerance in patients with metabolic syndrome. (sourceJoolies Cinnamon Date Syrup is low glycemic and cinnamon is great for stabilizing blood sugar. When you pair them together, this pudding is an indulgence treat you can enjoy whenever you’d like! We highly recommend topping it off with some more date syrup😉

Ingredients you'll need:

    1. Chia Seeds
      • These little seeds are the main component to our base and are also a great source of healthy fats, fiber, and protein. 
    2. Coconut Milk
    3. Joolies Cinnamon Date Syrup 
    4. Silken Tofu 
      • This is going to create the creamy texture of cheesecake, while keeping it vegan + nut-free. 
    5. Vanilla + Cinnamon + Cloves + Cardamom 
      • The combination of these spices will create the chai flavor we want!

Chai Cheesecake Chia Pudding

Vegan, Gluten-Free, Nut-Free, Refined sugar-free

  • prep time: 20 minutes
  • chill time: 3+ hours
  • total time: 3.5+ hours

INGREDIENTS:
 
Chia pudding base: 
  • 3 Tbsp Chia seeds 
  • 3/4 cup Lite Coconut milk, from the can
  • 1 tsp Vanilla extract 
  • Pinch of salt 
  • (optional) Few drops of stevia to sweeten 
 
Chai cheesecake layer: 

DIRECTIONS:
  1. To prepare the chia pudding, simply combine the chia seeds, coconut milk, vanilla extract, and salt in a bowl. Let this sit for 5 minutes and then mix again. This will ensure that the chia seeds don't sink to the bottom. Place the pudding in the fridge to thicken for at least 3 hours, ideally overnight. 
  2. Prepare the cheesecake layer by adding the silken tofu, Joolies cinnamon syrup, and spices and salt into a blender. Blend until smooth and creamy. Make sure there are no tofu lumps left. 
  3. Divide the chia pudding between two jars, and layer the cheesecake layer on top of the pudding. Top with an additional drizzle of Joolies cinnamon syrup and enjoy!
