A healthy candy bar that actually tastes like a candy bar? Is that even possible? YES it absolutely is and we're here to show you just how easy these Healthy Paleo Twix bars are to make (and how they won't last a day in your kitchen)! Just look at those layers 😍

This better-for-you Twix bar is not just paleo, but also vegan and refined sugar-free, with medjool dates being the only natural sweetener. For the luscious caramel layer, we used our vegan Medjool Date Caramel, which is made up of only three ingredients: medjool dates, nut milk, and vanilla extract! We love making up a big batch of it to create different sweet treats, so if you haven't made it yet, this your moment! Plus, it makes a great dessert dip for fruit🍎 
 
If you happen to be out of chocolate chips or prefer to save your delicious chocolate bar for solo snacking, you can make your own chocolate topping. Just combine 1/4 cup melted coconut oil + 1/4 cup cocoa powder + 3 tbsp Joolies Date syrup + 1/2 cup vanilla extract and voila!

What all goes into this healthy candy bar? Here are the main ingredients you need for this date recipe: 
 
    1. Joolies Date Syrup 
      • The only natural sweetener needed. Plus you still maintain all the nutrient and health benefits of a medjool date in the syrup form.
    2. Coconut and Cassava Flour
      • It's important to use two different flours to get the desired consistency. You can substitute the cassava flour with almond flour, but we don't recommend substituting the coconut. 
    3. Almond Butter
      • This helps give the caramel layer the rich texture we all love in a Twix bar. You can substitute with another nut or seed butter if needed. 
    4. Medjool Date Caramel 
      • This 3 ingredient vegan caramel adds sweetness and creates the beautiful caramel flavor that we all love from Twix bars! All you need is 15 minutes to make it. Click here for the recipe. 
    5. Dark Chocolate Chips
      • We recommend using a dark chocolate without fillers like Enjoy Life, Hu Kitchen, or Eating Evolved.

Healthy Paleo Twix Bars

Vegan, Paleo, Refined sugar-free

  • prep time:  25 minutes
  • chill time: 1 - 2 hours
  • total time: 1.5 - 2.5 hours
Servings: 16
 
INGREDIENTS:
Shortbread layer: 
  • 1/2 cup coconut flour
  • 1/2 cup cassava flour
  • 1/4 cup Joolies Date Syrup 
  • 1/3 cup coconut oil, melted

Caramel layer:

Chocolate layer:

  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil
  • sprinkle of flakey sea salt

 

DIRECTIONS:
  1. Preheat oven to 350 degrees and line a 6x6 baking dish with parchment paper.

  2. In a medium sized bowl, combine coconut flour, cassava flour, melted coconut oil, and date syrup and mix until thoroughly combined. Note: the texture should not be crumbly, but stick together. 

  3. Transfer mixture into the lined baking dish and press evenly into the bottom. Bake for 12-15 minutes. Allow to cool to room temperature.
  4. Next prepare the date caramel (recipe linked here). Stir in almond butter and melted coconut oil into 2/3 cup of the date caramel. 
  5. Once the shortbread layer has cooled completely, spread the caramel layer evenly over the top. Place in freezer for 1.5 hours.
  6. In a small measuring cup, add the  chocolate chips and coconut oil and melt in the microwave in 30 second intervals, stirring in between until completely liquified. 
  7. Remove the pan from the freezer and pour the melted chocolate over the top. Place back in freezer for 5 minutes to harden.
  8. Sprinkle flakey sea salt on top, then cut into even bars of 16 and enjoy! 

Store in an air-tight container in the fridge.
