This Savory Oatmeal with roasted cinnamon, rosemary butternut squash is perfect for breakfast, brunch, lunch, or dinner on a chilly day. Vegan, Gluten-Free, and Nut-Free.

Ingredients in these oats:

    1. Soulfull Project Hearty Grains & Seeds Multigrain Cereal Cup

    2. Joolies Cinnamon Date Syrup

Savory Oatmeal with Roasted Cinnamon Squash

Vegan, Gluten-Free, Nut-Free, Refined Sugar-Free

  • prep time: 40 minutes
  • Cook time: 5 minutes
  • total time: 45 minutes

INGREDIENTS:
DIRECTIONS:
  1. Preheat oven to 400 degrees. Peel and cut butternut squash into 1 inch cubes. (we will only use about ½ cup for one serving)

  2. Place on tray and coat with olive oil (or coconut oil), salt, pepper and rosemary (fresh or dried). Pop the squash in the oven to roast for 35-40 minutes.

  3. After 25 minutes of cook time, take out the tray of and spread the butternut squash with approximately 3 tablespoons cinnamon date syrup (depending on how big the squash is you may need more, approximately 1 tablespoon per half cup of squash).

  4. Cook the remaining time (about 10-15 minutes) and allow the squash to brown slightly.

  5. Remove from oven and prepare Soulfull Project Hearty Grains & Seeds Cup (as directed on side of cup, or substitute vegetable broth for water).

  6. Add about ½ cup of roasted butternut squash to the Hearty Grains & Seeds cup. Top with more date syrup and pumpkin seeds if desired and enjoy!
