These easy peanut butter energy balls are naturally sweetened with medjool dates and packed with healthy fats and fiber, perfect for an on-the-go snack any time you need it.

Made with only 5 ingredients, these peanut butter energy balls are vegan, gluten-free, and only sweetened with medjool dates🌴 making them refined sugar-free as well. This date recipe has a good balance of healthy fats, carbs, and protein which will help keep you full longer 😎They are great as a pre or post workout snack, mid-afternoon pick me up or whenever the hanger strikes!

Ingredients you'll need:  

    1. Joolies Medjool Dates
      • The only natural sweetener needed. Don't forget to soak in warm water first! Why soak them? Well while they are juicy beforehand, this step allows them to become extra-hydrated to create the perfect texture for the energy balls.
    2. Gluten-free Oats
    3. Peanut butter
      • We went with creamy, but if you want some crunch...go crunchy😉 Whether you're creamy or crunchy we recommend using a peanut butter with no added oils or sugars. Some of our favorites are Wild Friends and Georgia Grinders! 
    4. Flaxseed
      • This adds healthy omega-3 fatty acids and great boost of fiber, protein, antioxidants and more. You can check out more benefits of flaxseed here.
    5. Cinnamon + sea salt
      • To compliment and accentuate the other flavors!

Optional add-ins:

    1. Chocolate Chips 
    2. Chia seeds/ Hemp seeds
    3. Collagen peptides

Peanut Butter Energy Balls

Vegan, Gluten-Free, Refined sugar-free

  • prep time: 5 minutes
  • chill time: 10 minutes
  • total time: 15 minutes
Servings: 12
 
INGREDIENTS:
  • 10 Joolies dates, pitted
  • 1/2 cup peanut butter
  • 3/4 cup gluten-free oats
  • 1/4 cup flax seed
  • 1 tsp ground cinnamon
  • pinch of sea salt
  • 2 tbsp water*

 

DIRECTIONS:
  1. Soak pitted dates in warm water for 5 minutes.

  2. Add all ingredients to a food processor and process until a sticky mixture forms  Note: you may need to add 2 tbsp of water to reach desired consistency.

  3. Pop in the fridge for 10 minutes to chill the mixture. Roll into 1 inch balls and enjoy!

Store in an air-tight container in the fridge.
