Cookies for breakfast? You don't have to ask us twice! These vegan date cookies are the perfect pairing with your morning coffee☕ or tea🍵 They also make a great portable snack when you need a quick bite of energy!
 
Naturally sweetened and packed with fiber from Joolies medjool dates, these little gems will give you the ⚡energy boost⚡ you need to get going in the morning. They can also be made gluten-free--just swap out the wheat flour for a gluten-free version. We promise they will taste just as yummy!😊

Perfect Breakfast “Date” Cookies

(Vegan)

  •  Prep time: 25 minutes
  • Cook time: 9-11 minutes
  • Total time: 35 minutes
 
INGREDIENTS:
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 2 tbsp flax seed meal
  • 1/2 tsp salt
  • 3 tbsp unsweetened coconut flakes
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 1 cup chopped Joolies dates
  • 2 tbsp chocolate chips (optional)
  • 2-3 tbsp almond milk or water
 
DIRECTIONS:
  1. Preheat oven to 350 degrees and line a baking sheet.
  2. In a small bowl, combine flour, baking soda, flax, coconut flakes, and salt until thoroughly combined and then set aside.
  3. In a separate bowl, mix the peanut butter date or maple syrup, and vanilla. 
  4. Next, combine the flour mixture with the wet ingredients. Stir in the chopped dates and chocolate chips. Note: the batter will be dry.
  5. Add water or almond milk until the batter is moistened. 
  6. Scoop batter onto the lined baking sheet and flatten with a fork. 
  7. Bake for 9-11 minutes and enjoy!
