Whether you're looking for the perfect side dish, appetizer, or an easy plant-based dish, this Shaved Brussels Sprout Salad with Date Lemon Vinaigrette will be your new go to! All you need are 4 simple ingredients to create a hearty, nourishing salad. You may be thinking hearty salad? That sounds contradictory😆Yes it's true, salads can be hearty! 
 
In this shredded Brussels sprout salad recipe, we’re keeping them in their raw state and shredding them to use as a hearty stand in for lettuce. You can use pre-shredded Brussels sprouts or do it yourself, either way works and can be prepared a day or two ahead of time. Add in some extra protein like chicken, fish, etc for a well balanced lunch!
 
Homemade dressings are really where it's at! They taste fresher and are healthier than most store-bought options. This Date Lemon Vinaigrette consists of 4 basic ingredients, including Joolies date syrup as a natural sweetener.
 
Shaved Brussels Sprout Salad with Date Lemon Vinaigrette
 

Ingredients for the salad: 

    1. Shaved Brussels Sprouts
      • A hearty green is a major key to creating a fulfilling salad! 
    2. Pistachios
      • Every salad needs a yummy crunch factor! Did you know that pistachios are apart of the cashew family? And pistachios are actually a seed!
    3. Dried Cranberries
      • This dried fruit is rich in antioxidants and vitamins, being super rich in Vitamin C. Just be mindful of the added sugar typically found in store-bought packages. If possible, grab a bag of unsweetened.
    4. Parmesan Cheese
      • It's rich, sharp flavor adds lovely flavor and texture in salads. We recommend getting Parmigiano-Reggiano (that's real parmesan cheese). Read more about the difference of Parmigiano-Reggiano vs. parmesan here.

Ingredients for the vinaigrette:

    1. Olive Oil
      • This healthy fat source for our dressing  lot of proven benefits. You can substitute with avocado oil or tahini for an oil-free option. 
    2. Joolies Date Syrup 
      • The only natural sweetener needed for our dressing. Plus you still maintain all the nutrient and health benefits of a medjool date in the syrup form.
    3. Lemon Juice
      • Fresh is best! You'll get more flavor and zest from a freshly squeezed lemon. Plus, lemons are a great source of vitamin C and help to increase nutrient absorption. 
    4. Sea Salt
      •  This enhances the flavor profile.

Shaved Brussels Sprout Salad with Date Lemon Vinaigrette

Servings: 3-4
 
INGREDIENTS:
  • 9 oz bag shredded Brussels sprouts
  • 1/4 cup pistachios, shelled
  • 1/4 cup dried cranberries
  • 2 wedges parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp Joolies date syrup
  • juice 1/4 lemon
  • pinch of salt 

DIRECTIONS:
  1. Whisk the olive oil, date syrup, lemon juice and salt into a small bowl. Set aside.
  2. Mix brussels sprouts, pistachios and cranberries in a medium bowl. Top with parmesan wedges. 
  3. Pour the dressing over the salad and toss.
