In this shredded Brussels sprout salad recipe, we’re keeping them in their raw state and shredding them to use as a hearty stand in for lettuce. You can use pre-shredded Brussels sprouts or do it yourself, either way works and can be prepared a day or two ahead of time. Add in some extra protein like chicken, fish, etc for a well balanced lunch!

Date Lemon Vinaigrette consists of 4 basic ingredients, including Joolies date syrup as a natural sweetener.
Ingredients for the salad:

- Shaved Brussels Sprouts
- A hearty green is a major key to creating a fulfilling salad!
- Pistachios
- Every salad needs a yummy crunch factor! Did you know that pistachios are apart of the cashew family? And pistachios are actually a seed!
- Dried Cranberries
- This dried fruit is rich in antioxidants and vitamins, being super rich in Vitamin C. Just be mindful of the added sugar typically found in store-bought packages. If possible, grab a bag of unsweetened.
- Parmesan Cheese

- Olive Oil
- This healthy fat source for our dressing lot of proven benefits. You can substitute with avocado oil or tahini for an oil-free option.
- Joolies Date Syrup
- The only natural sweetener needed for our dressing. Plus you still maintain all the nutrient and health benefits of a medjool date in the syrup form.
- Lemon Juice
- Fresh is best! You'll get more flavor and zest from a freshly squeezed lemon. Plus, lemons are a great source of vitamin C and help to increase nutrient absorption.
- Sea Salt
- This enhances the flavor profile.
