Girl Scout cookie season may be over but who says you can't enjoy the delight of your favorite cookie all year-round?! Depending on where you are from, you might recognize "Samoas" or "Caramel deLites," when it comes to this coconut-y, caramel-y cookie. Technically, they are slightly different in flavor and ingredient ratios, but eh, it's just semantics. One aspect that reigns infallible between the two is the delectable flavor combination of coconut and caramel, accompanied by decadent dark chocolate.

These No Bake Samoa Cookies bring the nostalgia of a Girl Scout Samoa Cookie in a better-for-you way--that actually tastes like the real deal! Made with five simple ingredients that you *most likely* have in your pantry right now?! Say less ✋ While these don't have a shortbread base, I promise it won't be terribly missed because of how insanely quickly these come together--you could almost do it in your sleep...no joke!

Ingredients you'll need:

    1. Joolies Organic Medjool Dates
      • The only natural sweetener needed for our cookies. I don't recommend soaking in hot water before blending because it adds too much moisture. Plus, if you're using Joolies, they are already fresh and juicy enough!
    2. Shredded Coconut
      • We used unsweetened here, but if you want a sweeter bite go for the sweetened. Be sure to use finely shredded coconut as it helps us achieve the similar consistency of a samoa. Bob's Red Mill is a great choice.
    3. Dark Chocolate Chips
      • The smooth and delicious chocolate coating that covers the bum of our coconut-date mixture and tops it with a dainty drizzle! We recommend using a dark chocolate without fillers or artificial sweeteners (it takes longer to melt and isn't great for your body either) like Hu Kitchen, or Enjoy Life Foods.
    4. Coconut Oil
      • Adding a little bit of this into our melted chocolate helps keep it from drying out and thins it out to make it easier for dipping! Plus coconut oil has stellar health benefits, one being composed of healthy fatty acids called MCTs which promote brain function.
    5. Vanilla + Sea Salt
      • These help to elevate all the flavors, adding more dimension to these simple cookies. Adding a sprinkle of flakey sea salt on top adds balance to the sweetness of the dates, creating a delicious sweet and salty combo.

5 Ingredient No Bake Samoa Cookies

Vegan, Gluten-Free, Paleo, Refined sugar-free

  • chill time:10 minutes

Servings: 12
 
INGREDIENTS:
  • 12 Joolies dates, pitted
  • 1 cup shredded unsweetened coconut
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/2 tbsp coconut oil, unrefined
  • flakey sea salt
 
DIRECTIONS:
  1. Line a baking sheet with parchment paper then set aside. Place pitted dates, coconut flakes, and vanilla in a food processor or blender. Process until well combined into a sticky mixture.
  2. Roll into balls and flatten onto the baking sheet. Using a straw or chopsticks, poke a hole in the center of the flattened dough. Then pop the cookies in the freezer for 10-15 minutes.
  3.  In a small saucepan, heat the chocolate chips and coconut oil until melted. Dip the bottom of each Samoa into the melted chocolate, then drizzle more on top and sprinkle with sea salt. Pop them in the freezer again for 10 minutes for the chocolate to harden. 

Store in an air tight container in fridge for up to 2 weeks.
