Date Dijon Glazed Roasted Brussels Sprouts

Coated with a simply delicious Date Dijon Glaze, these roasted Brussels sprouts are an easy and healthy side dish to add to any week night meal, Thanksgiving or Holiday spread. Gluten Free, Dairy Free, Vegan.
 
Those tiny, divisive green globes of a vegetable, known as Brussels sprouts, have quite a reputation. You either love these mini cabbages, tolerate them or take it as a personal insult just at the mention of them. If you lean towards the latter two, these Roasted Brussels Sprouts with a Date Dijon Glazed might (will) just change your mind! Crispy, flavorful, and naturally gluten free, dairy free, and vegan,  this side dish is a delicious (and easy) addition to any week night meal or Holiday feast!
 
 
Although Brussels sprouts can be quite bitter when raw, cooking them at a high temperature ensures they transform into a flavorful, caramelized profile with tender (not mushy) centers and crispy edges. What really makes these sprouts standout is the coating of the delectable Date Dijon Glaze and the addition of sweet bites of medjool dates. You could even add in some crispy bits of bacon and/or toasted pecans for some crunch.
 
The glaze is comprised of three simple ingredients: dijon mustard, Joolies date syrup, and lemon juice. The date syrup adds a touch of natural sweetness that not only balances out the sprouts' inherent bitterness, but also helps create a crispy, caramelized exterior.
 
 

Ingredients you'll need:  

    1. Fresh Brussels Sprouts
      • These small cruciferous veggies are nutrient powerhouses, very rich in Vitamin K, Vitamin C, and folate. We need the Brussels sprouts cut and trimmed before roasting. If you are crunched for time, grab a bag of pre-trimmed at the store.
    2. Joolies Medjool Dates
      • Even though dates are typically used in sweet dishes, they add a richer flavor profile to savory dishes, becoming more caramel-like when warmed.
    3. Olive Oil
      • This adds healthy fats, antioxidants, and keeps our Brussels sprouts from burning. Avocado or grapeseed oil will work great as well.
    4. Dijon or Spicy Mustard
      • The addition of this bold and tangy ingredient pairs perfectly with the sweet date syrup to create a delicious glaze. If you like a little more spice, swap dijon for spicy mustard.

      • Fresh lemons bring the best flavor, so grab a few and start juicing 🍋 but if you have to opt for bottled lemon juice make sure it is 100% lemon juice. Plus, lemons are a great source of vitamin C and help to increase nutrient absorption.
    7. Garlic + Salt + Black Pepper
