This festive no bake Peppermint Date Bark is layered with naturally sweet medjool dates, smooth dark and white chocolate, and topped with crushed candy canes, making the perfect gift and holiday treat! Gluten Free, Dairy Free, and Vegan.
 
It’s lovely weather to share this Peppermint Date Bark with youuuuu🥰🍫🫶 This classic holiday fave is even more delicious with the *naturally* sweet addition of Joolies juicy medjool dates (ok we may be biased but we’re also not wrong😉). This no bake treat is vegan, gluten free, dairy free and made with four simple ingredients.

This Peppermint Date Bark is as simple as it is sweet--just four ingredients and zero oven time stand between you and holiday magic!✨ I'm a firm believer that medjool dates are the magic ingredient when it comes to creating classic candies into better-for-you versions. Whether you're gifting this to friends and family or keeping it all for yourself (no judgment here😉), this festive treat is bound to help you sleigh the season!

Ingredients you'll need:

    1. Joolies Medjool Dates
      • The most important ingredient here--adding that caramel-y element while adding a slew of nutritional benefits. We love using our pitted option for these, but whole work just as well! Just be sure to remove the pit😉
    2. Dark Chocolate Chips
      • This is our second layer We recommend using a dark chocolate without fillers or artificial sweeteners (it takes longer to melt and isn't great for your body either) like Hu Kitchen or  Eating Evolved. Natural chocolate is always the way to go for either bakes as well!
    3. White Chocolate Chips
      • This balances out our rich dark chocolate with notes of warm, vanilla flavor!
    4. Peppermint Extract
      • Adding a splash or more to our melted chocolates to add more delicious peppermint flavor to our bark!
    5. Coconut Oil 
    6. Crushed Candy Canes
      • This is our "cherry" on sprinkled on top that brings it all together, adding a fun, festive, and minty crunch! Crushed peppermints will work just as fabulous as well.

Peppermint Date Bark

Vegan, Gluten-Free, Dairy-Free Nut-Free

  • prep time: 10 minutes
  • chill time: 20 minutes
  • total time: 30 minutes
Servings: 8
 
INGREDIENTS:
  • 1 cup dark chocolate chips
  • 1 cup white chocolate chips
  • 1/2 tsp peppermint oil, divided
  • 2 tbsp coconut oil, divided
  • 1/3 cup candy canes, crushed
 
DIRECTIONS:
  1. Line a baking sheet with parchment paper. Pit dates (if needed) and flatten each date to form the bottom layer.
  2. In a small saucepan, heat the dark chocolate chips, 1/4 tsp peppermint oil, and 1 tbsp coconut oil until melted.
  3. Pour the melted chocolate over the smashed dates layer, creating a nice, even layer. Repeat steps 2 and 3 for the white chocolate. 
  4. Sprinkle crushed candy canes on top then pop in the freezer for 20 minutes to harden. Enjoy!

Store in an air tight container in the freezer for up to 1 month.
