If you spend even an inkling of time on social media, you have most definitely seen the Viral Dubai Chocolate Bar--it's the new IT Girl! Now, let's not let this take away from the glimmering, ever-present, shining light on medjool dates but we'll let Miss Dubai Chocolate have her little moment--supporting others successes doesn't diminish your own (food for thought fr)!

organic medjool dates

Well, the Viral Dubai Chocolate Bar and Viral Date Bark got together and made some delicious magic I like to call Viral Dubai Chocolate Date Bark (the name is really giving top tier creativity amiright?! 😂). With a base made from nature's candy, medjool dates, the middle layer is a decadent combination of crunchy toasted kataifi, pistachio butter and tahini--all topped off with a luscious layer of melted dark chocolate and some crushed pistachios. Is it getting hot in here or is it just us? 🥵

medjool dates

Ingredients you'll need:

    1. Joolies Medjool Dates
      • The most important ingredient here--adding that caramel-y element while adding a slew of nutritional benefits. We love using our pitted option for these, but whole work just as well! Just be sure to remove the pit😉
    2. Pistakio Pistachio Butter
      • Our friends over at Pistakio make the creamiest and dreamiest pistachio butter. Made with real pistachios—no artificial flavors or colors here! It's sweet and a lil salty with a strong pistachio flavor that really takes this date bark to the next level!
    3. Kataifi
      • Aka finely shredded phyllo dough! While traditionally used in various Middle Eastern and Mediterranean desserts, it's delicate, hair-like strands bake up to a golden, crispy texture and has been used for centuries especially in celebratory sweets or layered with nuts.
    4. Tahini
      • This creamy sesame butter is a staple in Middle Eastern and Mediterranean cuisines and adds a unique nutty flavor that enhances the crispy Kataifi pistachio layer.
    5. Avocado Oil
      • We toasted the Kataifi with this neutral oil to keep it dairy free but feel free to swap it out for butter as the traditional Dubai Chocolate Bar calls for!
    6. Dark Chocolate Chips
      • This is the top layer that coalesces everything together! We recommend using a dark chocolate without fillers or artificial sweeteners (it takes longer to melt and isn't great for your body either) like Hu Kitchen or  Eating Evolved. Natural chocolate is always the way to go for either bakes as well!
    7. Coconut Oil
    8. Pistachios
      • Adding some chopped pistachios on top adds a pop of color and a little extra crunch--it's like the cherry on top!

Viral Dubai Chocolate Date Bark

Vegan, Dairy-Free, Refined sugar-free

  • prep time: 10 minutes
  • chill time: 20 minutes
  • total time: 30 minutes
Servings: 8

INGREDIENTS:
  • 1 cup kataifi
  • 1/2 cup pistachio butter
  • 2 tbsp Tahini
  • 2 tbsp avocado oil / butter
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • pistachios, chopped

DIRECTIONS:
  1. Line a baking dish with parchment paper then pit and flatten each date to form the bottom layer (using a glass jar to smash the dates is very helpful).
  2. In a sauté pan, toast the kataifi with oil or butter. Grab a small mixing bowl and mix together the toasted kataifi, pistachio butter and tahini. Evenly spread mixture on top of the smashed dates.
  3. In a small saucepan, heat the chocolate chips and coconut oil until melted. Pour the melted chocolate over the kataifi layer, creating a nice, even layer. Sprinkle chopped pistachios on top and pop in the freezer for 20 minutes to harden. Enjoy!
