For a no fuss, no fail snack this giant peanut butter cup is made with only four simple ingredients: rice cake, medjool dates, peanut butter, and dark chocolate. Vegan, Gluten-Free, and Refined Sugar-Free. 

This viral TikTok snack hack is just too good not to share...with a few date-able additions😉 If you have no idea what we are referring to or need a refresher, basically a rice cake gets a healthy spread of peanut butter covered in melted chocolate and a sprinkle of flakey sea salt. And VOLIA! A healthier peanut butter cup-like snack.

To make it even easier, you most likely already have all of these ingredients lying around in the pantry when your sweet tooth hits! For a no bake, no fuss, no fail treat, our take on the giant peanut butter cup is made of five simple ingredients: rice cake, peanut butter, Joolies medjool dates, dark chocolate and flakey sea salt!

We have to admit rice cakes kinda fell off our radar, but now they're going to become a regular treat around here with this recipe. When paired with our Joolies medjool dates, it adds an additional caramel layer with an extra nutritional boost. Our dates add fiber, potassium, vitamin B and more, in this delicious vegan, gluten-free, and refined sugar-free treat!
 

Ingredients you'll need:

    1. Joolies Pitted Medjool Dates
      • We love using our pitted option for these, but whole work just as well! Just be sure to remove the pit😉If you're running low on your stock of dates, you can buy some in bulk right here or in our 2 pack right here!
    2. Rice Cakes
      • This nut is a key player in turtles! We opted for a raw pecan half, but roasted works as well.
    3. Peanut Butter
      • Adding this healthy fat makes this a satisfying snack, keeping you full longer. Feel free to swap out for your favorite nut or seed butter!
    4. Dark Chocolate
      • The smooth and delicious topping that binds everything together. If your chocolate isn't melting well, add in a bit of coconut oil to help *smoothen* the process. We recommend using a dark chocolate without fillers or artificial sweeteners. We love  Enjoy Life dark chocolate morsels and Hu dark chocolate gems 🍫
    5. Flakey Sea Salt
      • This little addition takes things up a notch. Totally optional, but highly recommended😎

Viral Giant Peanut Butter Cup

Vegan, Gluten-Free, Refined Sugar-free

INGREDIENTS:
 
DIRECTIONS:
  1. Spread peanut butter evenly over rice cake. Then cut each medjool date in half. Gently flatten each half and place on top of rice cake.
  2. Melt dark chocolate and spoon melted chocolate over the top of the rice cake.
  3. Sprinkle sea salt over chocolate covered rice cake then place in freezer for 8-12 minutes until chocolate has hardened before devouring!

Store in an air tight container in the fridge if not enjoying immediately.
