Fuel your day with these peanut butter + jelly overnight oats made with nutritious ingredients like rolled oats, nut butter, and naturally sweetened with medjool dates. An easy and healthy, breakfast spin on this childhood fave sandwich! Vegan, Gluten Free, Refined Sugar Free.
 
One thing I absolutely love about overnight oats--aside from the utter convenience and ease that comes with preparing them--is how customizable they are! Think of overnight oats like a mood ring...you can change them based on your mood🥰 Today my mood ring must have been red because these Peanut Butter + Jelly Overnight Oats happened! With back to school around the corner it is queueing the nostalgia (and the new Barbie movie definitely has me reminiscing).

Typically, overnight oats are made with chia seeds, which helps create that thicker texture and adds balance nutritionally as a healthy fat! Here we're going to use some luscious peanut butter instead, which works the same as chia seeds would (and personally I think creates a better creamy texture)! Note: almond, cashew, sunflower, etc butter work just as effectively!

Why You'll Love Overnight Oats

  • They are ridiculously easy to make ahead and/or meal prep! So as you're dashing out the door, you'll have breakfast ready to grab and go. Plus, they stay fresh and delicious throughout the week so you can prep several at once!
  • Easier to digest! Oats naturally contain phytic acid which hinders the absorption of important nutrients like calcium, magnesium, iron, etc. Soaking your oats reduces the phytic acid content, making it easier for your body to absorb those vital nutrients. Read more about this here.

Ingredients you'll need:

    1. Joolies Organic Medjool Dates
      • This fresh fruit adds just a touch of natural sweetness and works hand in hand with the nut butter to achieve that creamy, dreamy texture while adding all the amazing benefits of dates
    2. Gluten Free Rolled Oats
      • When it comes to overnight oats, ROLLED oats achieve the utmost perfect texture. Some of our favorite gluten-free oat brands are Thrive Market and Bob's Red Mill.
    3. Peanut Butter
      • This healthy fat is what makes the oats thick and creamy! Feel free to swap out for different nut or seed butter.
    4. Coconut Milk
      • To keep it vegan, we went with a coconut milk, but any dairy-free milk will work perfectly. If you're out of milk, you can substitute with water, it just won't be as creamy.
    5. Favorite Jelly
      • Strawberry, grape, raspberry, whatever speaks to you (or rather what you have on hand haha). If you want to skip out on the added sugar, add Easy Chia Seed Jam instead!

  1. Optional Add-ins / Toppings 

    1. Protein Powder
      • If you're wanting a bit more protein in the morning, just add in your favorite protein powder or collagen peptides. Note: you may need to add in a bit more liquid. 
    2. Fresh Fruit
      • Blueberries, strawberries, banana slices, apple slices, etc

Peanut Butter + Jelly Overnight Oats

Vegan, Gluten-Free, Dairy-Free, Refined sugar-free

  • prep time: 5 minutes
  • chill time: 6+ hours
  • total time: 6 hours
Servings: 1
 
INGREDIENTS:
  • 1/2 cup rolled oats
  • 1-2 Joolies dates
  • 1.5 tbsp peanut butter
  • 1 tbsp favorite jelly
  • 3/4 cup coconut milk

For Topping:

  • fresh strawberries
  • peanuts
  • peanut butter
 
DIRECTIONS:
  1. Soak pitted dates in warm water for 5 minutes. Place softened dates into a small bowl and smash into a paste.
  2. In a sealable container, combine the oats, coconut milk, peanut butter, jelly, and smashed dates and mix together well. 
  3. Cover and pop in the fridge for at least 6 hours or overnight.
  4.  Top with fruit, peanuts, and a drizzle of peanut butter and enjoy! 

Store in an air tight container in fridge for 4-5 days.
