With spooky season here, we've got TREATS on the brain (that's how the Rihanna song goes right😝)! Okay, who are we kidding, we are we not thinking about sweets! We're all about balance and indulging in some sugary sweets but a little too much indulgence can be, well...spooky for your insides.

So for the times when you're craving some sweetness without the sugary nightmare, we've got just the perfect festive fix for you! Spooky Stuffed Dates 3 Ways: Mummy Dates, Ghost Dates, and Eyeball Dates. These simple sweet bites bring all the Halloween vibes--minus the sugar crash!

It's no secret that medjool dates are a magic ingredient when it comes to creating classic candies into better-for-you versions. From Copycat Reese's Peanut Butter Pumpkins, Almond Joy Stuffed Dates, Healthy Paleo Twix Bars, these spook-tacular treats are nothing short of goodness and flavor with quite the shorter ingredient list!

Ingredients you'll need:

    1. Joolies Organic Medjool Dates
      • You can't stuff a date without a date! Whether you're team pitted or whole, both work equally as delicious and still give you all the amazing benefits of dates
    2. Peanut Butter or Nut Butter
      • Grab your favorite nut or seed butter that you have on hand to use as the "stuffing" for our dates. For an allergen friendly options, we adore our friends over at Oat Haus and all their delicious granola butters!
    3. Cream Cheese
      • This adds a great creamy texture to the spooky eyes stuffed dates! You can also use goat cheese or a a dairy-free cheese if you so desire. We really love Miyoko's vegan cream cheese as an alternative for the same thickness and flavor.
    4. Honey
      • A little drizzle of this brings everything together and balance out the tanginess of the cream cheese. 
    5. White Chocolate Chips
      • This is really going to bring our ghost and mummy dates to life! Enjoy Life Foods recently came out with mini white chocolate chips free from the top 14 allergens!
    6. Mini Dark Chocolate Chips
      • These are going to be the eyes + mouth for the ghost dates. We recommend using a dark chocolate without fillers or artificial sweeteners (it takes longer to melt and isn't great for your body either) like Hu Kitchen, or Enjoy Life Foods. For an extra touch of fun, you can also opt to use candy eyes instead of chocolate chips.
    7. Coconut Oil

Spooky Stuffed Dates - 3 Ways

Vegan, Gluten-Free, Dairy Free

  • prep time: 10 minutes

Servings: 10-12
 
MUMMY DATES INGREDIENTS:
  • 10-12 Joolies dates, pitted
  • 1/4 cup nut/seed butter
  • 1/2 cup white chocolate chips
  • 1 tbsp coconut oil
  • mini dark chocolate chips for eyes

GHOST DATES INGREDIENTS:

  • 10-12 Joolies dates, pitted
  • 1/2 cup white chocolate chips
  • 1 tbsp coconut oil
  • mini dark chocolate chips for eyes

EYEBALL DATES INGREDIENTS:

  • 8-12  Joolies dates, pitted
  • 2 oz cream cheese
  • 1-2 tbsp honey
  • 8-12 blueberries
     
MUMMY DATE DIRECTIONS:
  1. Slice each date open and remove the pit, unless using Joolies pit-free, then set aside.
  2. Stuff each date with nut or seed butter then set aside.
  3. In a small saucepan or double boiler, add the white chocolate chips and coconut oil over medium heat, stirring frequently until melted.
  4. Drizzle melted chocolate all over each date, then add dark chocolate chips for the eyes (or candy eyes). 
  5. Once you've covered them all, pop them in the freezer for 10 minutes for the chocolate to harden. 

GHOST DATE DIRECTIONS:

  1. Slice each date open and remove the pit, unless using Joolies pit-free. Pinch the date at the bottom to create a "tail," then set aside.
  2. In a small saucepan or double boiler, add the white chocolate chips and coconut oil over medium heat, stirring frequently until melted.
  3. Spoon melted chocolate at the top of each date, then carefully drag towards the bottom to create a ghost shape. Add mini dark chocolate chips for the eyes and mouth. 
  4. Once you've covered them all, pop them in the freezer for 10 minutes for the chocolate to harden. 

EYEBALL DATE DIRECTIONS:

  1. Slice each date open and remove the pit. Stuff each date with cream cheese then add one blueberry in the center of each date for the "eye." Drizzle with honey and enjoy! 

Store in an air tight container in fridge for up to 2 weeks.
